Funen smoked cheese. The Funen way to eat this smoked cream cheese is to spread the smoked cheese on rye bread, and top it with radishes and chives.
The smoked cheese originates from Funen and can be traced back to the 1830s. Unlike other Danish cheeses, the smoked cheese was supposed to be a purely Danish invention, although the Romans could also smoke their cheeses to make them last longer.
The smoked cheese was originally a sour-milk cheese. Jugs of soured milk were placed in a saucepan over heat embers, after which the cheese was layered in a wooden bowl with salt and caraway. The cheese was put under pressure until the next day, when the actual smoking awaited. It was placed on a grate and turned over the smoke from meadow hay or oat straw.
