Dr. Oetker Baking Soda is a leavening agent for use in baked goods. Using baking soda ensures that the baked goods achieve the right volume during baking. Baking soda is a combination of acid and base. When baking soda comes into contact with liquid and the heat from the oven, the acid reacts with the base, creating carbon dioxide and the dough starting to become airy. If you replace baking soda with natron baking soda, the taste can easily become bitter if the dough does not contain a sour milk product. Natron Baking soda can be replaced with baking powder, but it is best to use it as the recipe prescribes.
